If you want a healthy dish that is cool for summer, smells fresh and has savoury, beany flavour, Korean soy milk noodle soup is a must-try.
It was a hot day, and when I tried this dish, it cooled my body down quick! It meets all my criteria for a healthy and delicious noodles soup. Indeed, I can enjoy this meal year round.
- Good for health: It is made with soybean broth, Korean thin noodles, added with fresh cucumber garnish (somewhere also with tomato/ watermelon), and seasoned with sesame seeds, and/or nuts and/or salt. Each and every of them is proved to have huge health benefits.
- 'Beany' flavour: After being soaked, the soybeans are cooked and pureed until smooth. The beans for 콩국수 (kongguksu) are not overcooked. That's why they retain their natural flavor.
- A nice treat in the summertime: All of the ingredients are refreshing enough to make Kongguksu a delicious summer meal - from soybeans, cucumber, tomato to water and ice cubes.
