Main Ingredients:
- Lotus Root (500g)
- Water (4 cups/800ml)
- Vinegar (2 tablespoons)
- Brown Sugar (3 tablespoons)
- Cooking Oil (3 tablespoons)
- Roasted Pine Nuts (50g)
- Soy Sauce (1 tablespoon)
- Minced Garlic (1 tablespoon)
- Minced Cheongyang Pepper (1/2 tablespoon)
Seasoning Ingredients:- Soy Sauce (3 tablespoons)
- Kelp Water (1/2 cup/100ml)
- Plum Syrup (3 tablespoons)
- Starch Syrup (2 tablespoons)
- Sesame Seeds (1 tablespoon)
Lotus Root Recipe:
1. Cut the lotus root into thick slices. To preserve it longer, wrap the lotus root in newspaper and store it in the refrigerator.
2. Mix vinegar with water and soak the lotus root slices to remove bitterness.
3. Rinse the lotus root thoroughly with clean water.
4. Season the lotus root with brown sugar, soy sauce, and minced garlic.
5. In a heated wok, add cooking oil and stir-fry the seasoned lotus root.
6. Pour in kelp water, additional soy sauce, plum syrup, and minced Cheongyang pepper. Cook over medium heat for about 10 minutes.
7. Stir in starch syrup and continue to stir-fry on high heat for 2 minutes to ensure the dish remains soft when cooled.
8. Remove from heat, add roasted pine nuts and sesame seeds, and mix well.
9. Serve the stewed lotus root in a bowl and enjoy!
