1. Boil water in a pot and add the green onion (30g), minced ginger (1/2T), and pork back ribs (250g). Boil for 4-5 minutes.

2. Drain the boiled back ribs and rinse them in cold water. Remove any impurities from the bones.

3. Heat oil in a large pot and stir-fry the back ribs for 15 minutes.

4. Add water (5 cups/1L) and bring to a boil. Simmer for 20 minutes.

5. Cut the potatoes (360g) into large chunks and shave the edges.

6. Cut the perilla leaves (20g) into bite-sized pieces.

7. Slice the green onion (20g).

8. Make the seasoning by mixing gochujang (1T), red pepper powder (1T), minced garlic (1T), minced ginger (1/2T), rice wine (1T), oyster sauce (1/10T), and black pepper powder (a pinch). Add some broth from the pot to the seasoning to prevent lumps and stir well.

9. Add the potatoes and the seasoning to the pot with the back ribs. Simmer for about 15 minutes.

10. Add salt (1/4T) and perilla leaves and turn off the heat.

11. Serve the back rib potato soup in a bowl. Enjoy!
