Healthy and tasty honey rice cakes! It’s perfect for a nutritious quick meal or a wholesome brief snack~
■ Main Ingredients: Rice (soaked for 30 minutes, 400g), Chestnuts (peeled and halved, 180g), Ginkgo Nuts (shelled and cooked, 60g), Pine Nuts (roasted, 45g), Jujube (pitted and sliced, 55g), Dried Cranberries (40g), Water (2 cups/400ml)
■ Seasoning Ingredients: Soy Sauce (2T), Brown Sugar (3T), Honey (2T), Salt (1/3T), Cinnamon Powder (1/2T)
■ Cooking Procedure and What to Put on Rice Cakes
- In a small pot, combine water, soy sauce, salt, brown sugar, and honey to make the seasoning. Stir well until the sugar dissolves and bring to a boil. Then let it cool down slightly.
- Add the soaked rice to the rice cooker and spread it evenly.
- Add the cinnamon powder to the seasoning and mix well. Pour it over the rice and make sure the rice is covered with the liquid.
- Sprinkle the chestnuts, jujube, ginkgo nuts, cranberries, and pine nuts on top of the rice. Do not mix them with the rice.
- Cook the rice using the normal or glutinous rice setting on your rice cooker.
- When the rice is done, fluff it gently with a spatula and transfer it to a square baking pan. Press it down firmly and evenly.
- Let the rice cake cool down completely at room temperature. It will become firmer as it cools.
- Cut the rice cake into bite-sized pieces and enjoy!
